Traditional Quebec recipe: Speckled Trout Tartare. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 400 g very fresh speckled trout fillets
  • 2 chopped French shallots
  • 1 tbsp grated fresh ginger
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp chopped chives
  • 1 Sesame seeds
  • 1 Salt and pepper

Instructions

    Cut the trout into small dice with a knife.

    Mix the shallots, ginger, sesame oil, soy sauce, and lime.

    Gently fold in the fish.

  4. 4

    Garnish with chives and sesame seeds.

  5. 5

    Serve immediately, well chilled.
