Ingredients

  • 1 pig's head or 2 pig's trotters
  • 1 onion studded with cloves
  • 2 carrots
  • 2 celery stalks
  • 1 bay leaf
  • 5 peppercorns
  • 1 tsp salt
  • 0.5 tsp cinnamon
  • 0.5 tsp ground cloves
  • 1 Water to cover

Instructions

    Thoroughly clean the meat and place it in a large pot.

    Cover with cold water and add the onion, carrots, celery, bay leaf, and peppercorns.

    Bring to a boil, skim off any foam, then simmer gently for 3-4 hours.

    Remove the meat and debone it. Finely chop the meat.

    Strain the broth and reduce it by half. Season with salt, cinnamon, and cloves.

    Mix the chopped meat with the broth, pour into a mold, and refrigerate overnight. Unmold and slice.
