Traditional Quebec recipe: Traditional Moose Stew. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 kg moose cubes(shoulder or shank)
  • 3 tbsp vegetable oil
  • 2 chopped onions
  • 3 carrots, sliced
  • 3 potatoes, cubed
  • 2 celery stalks, diced
  • 1 turnip, cubed
  • 2 garlic cloves, minced
  • 1 can diced tomatoes(796 ml)
  • 500 ml beef broth
  • 250 ml red wine
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 Salt and pepper to taste
  • 3 tbsp flour

Instructions

    Flour the moose cubes and brown them in oil over high heat in a Dutch oven.

    Remove the meat and sauté the onions and garlic for 3 minutes.

    Deglaze with red wine, scraping up any browned bits from the bottom.

    Return the meat, add the broth, tomatoes, bay leaves, and thyme.

    Bring to a boil, reduce heat, and simmer covered for 2 hours.

    Add the carrots, celery, turnip, and potatoes. Continue cooking for 45 minutes.

    Season and serve with homemade bread.
