Traditional Quebec recipe: Traditional Northern Caribou Stew. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 kg cubed caribou(shoulder)
  • 3 chopped onions
  • 3 sliced carrots
  • 3 cubed potatoes
  • 1 diced turnip
  • 2 garlic cloves
  • 2 L broth(water and caribou bones if available)
  • 3 tbsp flour
  • 3 tbsp oil or lard
  • 1 Salt, pepper, and savory

Instructions

    Flour and brown the caribou cubes in oil over high heat.

    Add the onions and garlic, cook for 3 minutes.

    Cover with broth. Add the savory.

    Simmer covered for 2 hours over low heat.

    Add the carrots, turnip, and potatoes.

    Continue for 45 minutes until vegetables are tender.

    Season and serve with bannock (Indigenous bread).
