Traditional Quebec recipe: Venison Steak with Garlic Butter. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 2 cm Venison Steaks(sirloin)
  • 4 tbsp softened butter
  • 3 crushed garlic cloves
  • 2 tbsp fresh chopped parsley
  • 1 tbsp olive oil
  • 1 Sea salt and freshly ground pepper

Instructions

    Prepare the garlic butter by mixing the butter, garlic, and parsley. Form into a roll in plastic wrap and refrigerate.

    Remove steaks 30 minutes before cooking. Oil and season them.

    Sear the steaks in a smoking hot cast iron skillet, 3 minutes per side.

    Place a slice of garlic butter on each steak immediately after removing from the pan.

    Let rest for 5 minutes. Serve with homemade fries.
