Traditional Quebec recipe: Venison Stir-fry with Vegetables. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g finely sliced venison(against the grain)
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 onion, quartered
  • 200 g snow peas
  • 2 minced garlic cloves
  • 1 tbsp fresh grated ginger
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 3 tbsp sesame oil

Instructions

    Combine soy sauce, oyster sauce, and cornstarch. Set aside.

    Heat oil in a wok over very high heat.

    Sear the meat in small batches for 1-2 minutes. Set aside.

    Sauté the crisp vegetables for 3-4 minutes.

    Return the meat, add garlic and ginger.

    Pour in the sauce and stir until thickened.

    Serve over steamed rice.
