Traditional Quebec recipe: Walleye Ceviche. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 400 g very fresh walleye fillets, cut into small cubes
  • 1 Juice of 4 limes
  • 1 Juice of 1 lemon
  • 1 small red onion, finely diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 tomato, diced
  • 1 avocado, diced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp olive oil
  • 1 Salt and pepper
  • 1 Tortilla chips, for serving

Instructions

    Place the walleye cubes in a bowl. Cover with lime and lemon juice.

    The fish must be completely submerged in the citrus juice.

    Refrigerate for 2-3 hours, stirring halfway through. The fish will turn opaque (a sign that it is 'cooking').

    Drain lightly. Add the onion, jalapeño, tomato, and cilantro.

    Add the avocado and olive oil just before serving.

    Serve well chilled with tortilla chips.
