Traditional Quebec recipe: Walleye Chowder. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g walleye fillets, cubed
  • 4 bacon slices, diced
  • 2 potatoes, small diced
  • 1 onion, chopped
  • 2 celery stalks, diced
  • 500 ml fish broth or stock
  • 250 ml 15% cream
  • 250 ml milk
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 Thyme, salt, and pepper

Instructions

    Cook the bacon in a large pot. Add the onion and celery.

    Sprinkle with flour and cook for 2 minutes.

    Add the broth and potatoes. Cook for 15 minutes.

    Add the milk and cream. Bring to a simmer.

    Add the walleye cubes and thyme. Cook for 5-8 minutes.

    The fish is ready when it flakes easily.

    Serve with soda crackers or crusty bread.
