Traditional Quebec recipe: Walleye Meunière with Brown Butter. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 walleye fillets
  • 80 ml flour
  • 4 tbsp butter
  • 1 lemon juice
  • 2 tbsp fresh chopped parsley
  • 1 salt and pepper to taste

Instructions

    Season the walleye fillets with salt and pepper and lightly flour them.

    Melt the butter in a pan over medium-high heat.

    Place the fillets skin-side up. Cook for 3-4 minutes.

    Gently flip and cook for 2-3 minutes.

    Remove the fillets. Continue heating the butter until it turns brown.

    Add the lemon juice and parsley to the brown butter.

    Spoon the sauce over the fillets and serve immediately.
