Traditional Quebec recipe: Walleye Guédilles. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g cooked and flaked walleye fillets
  • 3 tbsp mayonnaise
  • 2 tbsp finely chopped celery
  • 1 tbsp chopped chives
  • 1 tbsp lemon juice
  • 4 top-split hot dog buns(split on top)
  • 2 tbsp butter
  • 1 Shredded iceberg lettuce
  • 1 Salt and pepper

Instructions

    Mix the flaked walleye with mayonnaise, celery, chives, and lemon juice.

    Season with salt and pepper.

    Butter the outside of the buns and grill them in a pan.

    Fill with lettuce and the walleye salad.

    The guédille is the Quebec cousin of the lobster roll, here adapted for walleye.
