Traditional Quebec recipe: Walleye Stuffed with Herbs and Breadcrumbs. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 whole walleye 1-1.5 kg, cleaned
  • 125 ml breadcrumbs
  • 2 tbsp fresh parsley
  • 1 tbsp fresh dill
  • 2 minced garlic cloves
  • 1 chopped shallot
  • 2 tbsp melted butter
  • 1 Zest of one lemon
  • 4 lemon slices
  • 1 Salt and pepper

Instructions

    Preheat oven to 375°F (190°C).

    Mix the breadcrumbs, herbs, garlic, shallot, butter, and zest.

    Salt and pepper the inside and outside of the walleye.

    Stuff the cavity with the breadcrumb mixture.

    Place the lemon slices on the fish.

    Bake for 25-30 minutes (10 min per inch of thickness).
