Ingredients
- 400 g very fresh walleye fillets
- 2 finely chopped French shallots
- 1 tbsp chopped capers
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tbsp chopped chives
- 1 1/2 tsp lime zest
- 1 Sea salt and pepper
- 1 Wonton chips or croutons
Instructions

Cut the walleye into small, regular cubes with a sharp knife.

Keep very cold on a bed of ice.

Mix the shallots, capers, oil, lime juice, and zest.

Gently fold in the fish. Season with salt and pepper.

Shape with a ring mold. Garnish with chives.

Serve immediately with the chips.
