Traditional Quebec recipe: Walleye Tartare. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 400 g very fresh walleye fillets
  • 2 finely chopped French shallots
  • 1 tbsp chopped capers
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp chopped chives
  • 1 1/2 tsp lime zest
  • 1 Sea salt and pepper
  • 1 Wonton chips or croutons

Instructions

    Cut the walleye into small, regular cubes with a sharp knife.

    Keep very cold on a bed of ice.

    Mix the shallots, capers, oil, lime juice, and zest.

    Gently fold in the fish. Season with salt and pepper.

    Shape with a ring mold. Garnish with chives.

    Serve immediately with the chips.
