Traditional Quebec recipe: Braised Goose with Red Wine. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 goose, cut into pieces
  • 750 ml red wine
  • 250 ml chicken broth
  • 200 g bacon lardons
  • 2 onions, quartered
  • 3 carrots, cut into chunks
  • 4 garlic cloves
  • 2 tbsp tomato paste
  • 1 bouquet garni
  • 3 tbsp oil
  • 1 Salt and pepper

Instructions

    The day before, marinate the goose pieces in red wine with the bouquet garni.

    Drain and pat dry (reserve the marinade).

    Brown the bacon lardons, then sear the goose pieces until golden.

    Add the onions, garlic, and tomato paste.

    Pour in the marinade and broth.

    Cover and bake in the oven at 300°F (150°C) for 3-4 hours.

    Add the carrots during the last hour. Long cooking is necessary.
