Traditional Quebec recipe: Braised Wild Duck with Cherries. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 wild duck, cut into pieces
  • 250 ml fresh or frozen pitted cherries
  • 250 ml red wine
  • 125 ml duck stock
  • 2 tbsp butter
  • 1 chopped onion
  • 2 tbsp wine vinegar
  • 1 tbsp sugar
  • 1 Salt and pepper

Instructions

    Brown the duck pieces in butter. Set aside.

    Sauté the onion for 3 minutes.

    Deglaze with red wine and vinegar. Add the stock.

    Return the duck, cover, and simmer for 1 hour 30 minutes.

    Prepare the sauce by caramelizing the sugar and adding the cherries.

    Add the cherries to the duck during the last 15 minutes.

    Serve with sweet potato mash.
