- 1 wild duck, cut into pieces
- 250 ml fresh or frozen pitted cherries
- 250 ml red wine
- 125 ml duck stock
- 2 tbsp butter
- 1 chopped onion
- 2 tbsp wine vinegar
- 1 tbsp sugar
- 1 Salt and pepper
Instructions

Brown the duck pieces in butter. Set aside.

Sauté the onion for 3 minutes.

Deglaze with red wine and vinegar. Add the stock.

Return the duck, cover, and simmer for 1 hour 30 minutes.

Prepare the sauce by caramelizing the sugar and adding the cherries.
