Traditional Quebec recipe: Braised Wild Goose with Cider. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 wild goose, cut into pieces
  • 500 ml Quebec apple cider
  • 250 ml chicken broth
  • 3 apples, quartered
  • 2 onions, quartered
  • 3 carrots, cut into chunks
  • 4 garlic cloves
  • 2 tbsp old-fashioned mustard
  • 3 tbsp oil
  • 1 Thyme and bay leaf
  • 1 Salt and pepper

Instructions

    Brown the goose pieces in oil on all sides. Set aside.

    Caramelize the onions and apples for 5 minutes.

    Add the mustard, cider, and broth.

    Return the goose pieces, add the carrots, garlic, thyme, and bay leaf.

    Cover and bake at 300°F (150°C) for 3 hours.

    Wild goose meat is firm and requires long, slow cooking.
