- 1 wild goose, cut into pieces
- 500 ml Quebec apple cider
- 250 ml chicken broth
- 3 apples, quartered
- 2 onions, quartered
- 3 carrots, cut into chunks
- 4 garlic cloves
- 2 tbsp old-fashioned mustard
- 3 tbsp oil
- 1 Thyme and bay leaf
- 1 Salt and pepper

Brown the goose pieces in oil on all sides. Set aside.

Caramelize the onions and apples for 5 minutes.

Add the mustard, cider, and broth.

Return the goose pieces, add the carrots, garlic, thyme, and bay leaf.
