    Carefully spread or pipe the meringue into the drawn circles on the parchment paper. You can make three equal discs, or two larger base discs and one slightly smaller top disc for a classic tapered look.

    Bake for 1 hour and 45 minutes to 2 hours, or until the meringues are crisp and dry. Turn off the oven and let the meringues cool completely inside the oven with the door ajar for at least 30 minutes, or longer.

    In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract on medium-high speed until stiff peaks form.
