  • 250 ml heavy cream
  • 60 ml butter

    Place the brown sugar, cream, and butter in a heavy-bottomed saucepan.

    Bring to a boil over medium heat, stirring constantly.

    Cook without stirring until it reaches 115°C (240°F) on a candy thermometer (soft ball stage).

    Remove from heat. Add the vanilla.

    Beat with an electric mixer or wooden spoon until the mixture loses its sheen and thickens.

    Pour quickly into a buttered pan. Let harden and cut into squares.
