Traditional Quebec recipe: Feathered Game Pie. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 500 g mixed partridge and wild duck meat, cubed
  • 200 g sliced mushrooms
  • 2 chopped onions
  • 2 diced carrots
  • 250 ml poultry broth
  • 125 ml 35% cream
  • 3 tbsp flour
  • 3 tbsp butter
  • 1 tsp thyme
  • 1 package of puff pastry
  • 1 beaten egg
  • 1 Salt and pepper

Instructions

    Brown the meat cubes in butter. Set aside.

    Sauté the mushrooms, onions, and carrots for 5 minutes.

    Sprinkle with flour, cook for 2 minutes.

    Add the broth, stirring. Incorporate the cream.

    Return the meat with the thyme. Simmer for 10 minutes.

    Pour into a pie dish or individual ramekins.

    Cover with puff pastry, brush with egg.

    Bake at 400°F (200°C) for 25-30 minutes.
