  • 125 ml crème 35%
  • 1 tbsp beurre

    Heat the maple syrup, cream, and butter until it reaches 115°C (240°F).

    Remove from heat and let cool to 50°C (120°F).

    Beat vigorously until the mixture thickens and lightens in color.

    Pour into silicone molds or a buttered dish.

    Let harden in the refrigerator for 2 hours.

    Unmold and store in an airtight container.
