    Pour the syrup into a heavy-bottomed saucepan.

    Cook without stirring over medium-high heat until it reaches 118°C (245°F).

    Remove from heat immediately.

    Let cool for 5 minutes without touching.

    Stir vigorously for 2-3 minutes until the syrup lightens slightly.

    Quickly pour into molds. Let harden for 30 minutes. Unmold.
