  • 250 ml sugar

  • 125 ml chopped nuts
  • 1 Frosting: 80 ml brown sugar, 80 ml cream, 60 ml butter, 125 ml shredded coconut

    Pour boiling water and baking soda over the dates. Let cool slightly.

    Cream butter and sugar. Add egg and vanilla.

    Incorporate flour and baking powder, alternating with the date mixture.

    Add nuts. Pour into a greased 9x9 inch pan.

    Bake in the oven at 175°C (350°F) for 35-40 minutes.

    Frosting: Heat brown sugar, cream, and butter. Add shredded coconut. Spread over the hot cake. Broil for 2-3 minutes.
