  • 1 can pineapple slices(398 ml) drained (reserve juice)
  • 80 ml butter
  • 125 ml brown sugar
  • 1 Maraschino cherries
  • 375 ml flour
  • 175 ml sugar
  • 2 tsp baking powder
  • 1 egg
  • 125 ml reserved pineapple juice
  • 60 ml oil

    Preheat oven to 175°C (350°F).

    Melt butter in a 9-inch round pan. Sprinkle brown sugar evenly over the bottom.

    Arrange pineapple slices and cherries in the bottom of the pan.

    Combine flour, sugar, and baking powder.

    Beat the egg, pineapple juice, and oil. Incorporate into the dry ingredients.

    Pour over the pineapples and bake for 40-45 minutes. Invert immediately.
