Traditional Quebec recipe: Roasted Teal with Thyme. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 whole teals(small wild ducks)
  • 4 tbsp softened butter
  • 8 fresh thyme sprigs
  • 4 unpeeled garlic cloves
  • 2 tbsp olive oil
  • 125 ml white wine
  • 1 Salt and pepper

Instructions

    Preheat the oven to 425°F (220°C).

    Salt and pepper the teals. Stuff each cavity with butter, thyme, and garlic.

    Oil the teals and place them in a roasting pan.

    Roast for 25-30 minutes at high temperature (they are small and cook quickly).

    Deglaze the roasting pan with white wine to make the sauce.

    Serve 1 teal per person with a watercress salad.

    Teal has very flavorful dark meat.
