Traditional Quebec recipe: Slow Cooker Wild Duck with Maple Syrup. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 1 cut-up wild duck
  • 125 ml maple syrup
  • 80 ml soy sauce
  • 3 tbsp ketchup
  • 2 minced garlic cloves
  • 1 sliced onion
  • 1 tsp ground ginger
  • 1 1/2 tsp five-spice powder

Instructions

    Place the onion at the bottom of the slow cooker.

    Place the duck pieces on top.

    Mix the maple syrup, soy sauce, ketchup, garlic, and spices.

    Pour over the duck.

    Cook on LOW for 6-8 hours.

    The meat should fall apart easily.
