Traditional Quebec recipe: Wild Duck Breast with Honey and Thyme. A classic wild game dish from the Quebec hunting tradition.

Ingredients

  • 4 wild duck breasts
  • 3 tbsp honey
  • 2 tbsp balsamic vinegar
  • 2 fresh thyme sprigs
  • 2 minced garlic cloves
  • 1 Salt and pepper to taste

Instructions

    Score the skin of the duck breasts with a knife without cutting into the flesh.

    Place skin-side down in a cold pan. Cook over medium heat for 8 minutes.

    Flip and cook for 4 minutes on the flesh side.

    Remove and let rest for 5 minutes.

    In the same pan (drain some fat), sauté the garlic.

    Add the honey, balsamic vinegar, and thyme. Reduce for 2 minutes.

    Slice the duck breasts diagonally and drizzle with sauce.
