  • 1 clove, minced Garlic
  • 1 tablespoon Olive oil

Instructions

    In a large bowl, combine the ground lamb with the finely chopped onion, parsley, cilantro, ground cumin, ground coriander, paprika, cayenne pepper (if using), salt, and black pepper. Mix thoroughly by hand.

    Shape the mixture around wooden or metal skewers into elongated sausage shapes, pressing firmly. This should yield about 8-10 skewers.

    Prepare the sauce: In a small bowl, mix the yogurt, chopped mint, harissa paste, lemon juice, minced garlic, and olive oil. Taste and adjust seasoning as needed.
