
Quinoa Risotto with Vegetables, Poached Egg, and Lucuma Creole Sauce

- 50 g Cream cheese

- 100 g Lucuma pulp (fresh or frozen)
- 2 tablespoons Lime juice
- 1 teaspoon Aji amarillo paste
- 1/4 small Red onion (for salsa)
- 2 tablespoons Fresh cilantro

**Prepare the Lucuma Creole Sauce:** In a small bowl, combine the lucuma pulp, lime juice, aji amarillo paste, finely diced red onion, and chopped cilantro. Season with salt and pepper. Set aside in the refrigerator.

**Prepare the Quinotto:** Rinse the quinoa under cold water. In a medium saucepan, heat the olive oil over medium heat. Add the chopped red onion and minced garlic, sauté until translucent (about 3-4 minutes).
