
Roasted Cauliflower Tabbouleh with Mediterranean Herbs and Pomegranate

Ingredients
- 1 medium head Cauliflower
- 3 tablespoons Extra virgin olive oil
- 2 tablespoons Fresh lemon juice
- 1/2 cup Fresh flat-leaf parsley, chopped
- 1/4 cup Fresh mint, chopped
- 1/4 Red onion, finely chopped
- 1 cup Cherry tomatoes, halved
- 1/2 Cucumber, diced
- 1/2 cup Pomegranate arils
- 1/4 cup Sliced almonds, toasted
- 1/2 teaspoon Ground cumin
- 1/2 teaspoon Sweet paprika
