  • 2 tbsp Fresh cilantro, chopped
  • 0.5 tsp Chopped aji amarillo chili (optional)

Instructions

    **Prepare the roasted vegetables:** Preheat the oven to 200°C (400°F). Peel the sweet potato and cut it into 1.5 cm (0.6 inch) cubes. Cut the red bell pepper into cubes and the red onion into thin strips. In a large bowl, toss the sweet potato cubes, bell pepper, onion, and green beans with 2 tablespoons of olive oil, salt, and pepper. Spread the vegetables on a baking sheet lined with parchment paper and roast for 20-25 minutes, or until tender and slightly caramelized. Add the corn kernels halfway through cooking if using fresh corn.

    **Cook the quinoa:** Rinse the tricolor quinoa under cold water. In a saucepan, combine the rinsed quinoa with 400 ml (1.7 cups) of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all the water is absorbed and the quinoa germ is visible. Remove from heat and let stand covered for 5 minutes, then fluff with a fork.

    **Prepare the lucuma vinaigrette:** While the quinoa and vegetables are cooking, prepare the vinaigrette. In a small bowl, whisk together the lucuma pulp, lime juice, 3 tablespoons of olive oil, honey (if using), chopped cilantro, and aji amarillo chili (if using). Season with salt and pepper to taste.
